Important Notes When Doubling

  • Leavening agents: Don't double baking powder or baking soda exactly. Increase by about 1.5× instead of 2× to avoid a metallic taste.
  • Salt: Taste before doubling salt. Doubling often makes recipes too salty — start at 1.5× and adjust.
  • Spices: Same as salt — increase by 1.5× first, then taste and adjust.
  • Cooking time: Use a larger pan (same depth, larger area) and check for doneness at the original time.
