Pan Substitution Tips
Volume match is key: The most important thing when substituting pans is matching the total volume. Fill the pan no more than ¾ full to allow for rising.
Depth affects baking time: A shallower pan will bake faster. If switching to a shallower pan, reduce baking time by 15–20% and check earlier.
Dark pans cook faster: Dark non-stick pans absorb more heat. If using a dark pan when the recipe calls for light, reduce oven temperature by 25°F/15°C.
